About the product:
Three timer presets, set at the factory to 10, 15 and 30 seconds, do the dosing on the Vario+. Each one adjusts to a tenth of a second and stays saved even when the grinder is unplugged. Behind them sit 54mm flat ceramic burrs, which Baratza says are famous for thick, velvety shots.
The black Vario+ is the one we would put next to a dark or stainless espresso machine. White or black, the burrs, motor and controls are the same. Baratza recommends these ceramic burrs to people who drink espresso straight or with steamed milk, and we agree.
How to use:
Move the macro lever close to the size you want, then fine tune with the micro lever while the motor runs.
Lock the portafilter in the PortaHolder, press a preset and then START/STOP.
Press MANUAL and then START/STOP when you want to grind without a preset.

FAQs:
Q: Can I weigh doses with the Vario+?
A: Not on the grinder. The Vario+ doses by time, so weigh your first few doses and adjust the preset until it matches your recipe.
Q: Will my portafilter fit the PortaHolder?
A: The arms move up or down to fit different portafilter sizes. Loosen the two screws on the back with a Phillips screwdriver, adjust and tighten.
Q: Is the Vario+ only for espresso?
A: No. Swap the PortaHolder for the grounds bin, and the manual gives starting points from espresso to French press.
